Carrot Cake with Vanilla Icing

It was my dad's birthday a few days ago so I decided to bake him a carrot cake! For something that was super easy to make, it sure tasted good! Just make sure to spare some time for grating the carrots, lemon and orange zest!

Ingredients:

Cake
  • 300g plain flour
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 200g soft brown sugar
  • 4 eggs
  • 250ml oil
  • 1 orange, zested
  • 1 lemon, zested
  • 200g carrots, finely grated
  • 150g walnuts, chopped
Vanilla Icing:
  • 150g butter, softened
  • 250g icing sugar
  • 1-2 tbsp milk
  • Few drops of vanilla flavouring


Method:
  1. Heat the oven to 150C/fan 130/gas 2. Line a 20cm, 10cm deep cake tin.
  2. Sift the flour, cinnamon, baking powder and bicarbonate of soda together then stir in the sugar.
  3. In a separate bowl, beat the eggs with the oil and citrus zests. Stir in the carrots and fold everything into the mixture, along with the walnuts if using. (It is important to fold the mixture slowly to retain moisture)
  4. Spoon the mixture into the tin and bake for 1 hour and 20 minutes. Stick a skewer deeply through the middle, if the skewer is clean then the cake is done. Cool.
  5. For the icing, beat the butter until soft. Add half of the icing sugar and beat until smooth.
  6. Add the remaining icing sugar and 1 tbsp of the milk and vanilla flavouring and beat until the mixture is smooth and creamy. 
  7. Spread the icing on top of the cake and sprinkle with carrot gratings (optional).
Personally, I cut the cake in half so I can fill half of the the icing in the middle. However, that turned out to be way too sweet! So next time, I'm sticking with the icing just on top!
