Simple Fairy Cakes

This recipe is very very easy to make and makes a dozen cupcakes.

Ingredients:

Cake:
  • 150g butter, softened
  • 150g caster sugar
  • 3 eggs, beaten
  • 150g self-raising flour, sifted
  • 1 tsp vanilla extract
  • 1 tbsp milk
Icing:
  • 75g butter, softened
  • 150g icing sugar
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • Selection of food colouring
To decorate: (Optional)
  • Sprinkles
  • Hundreds and thousands
  • Chocolate sprinkles
Method:
  1. Preheat the oven at 180C/fan 160C/gas mark 4.
  2. Cream together the butter and sugar until light, fluffy and pale.
  3. Gradually mix in the beaten egg alternating with the flour to stop the mix from curdling. Finally, stir through the milk and and the vanilla extract.
  4. Place 12 paper cupcake cases into a muffin tin and divide the mixture between them.
  5. Bake for 15-20 minutes until golden and springy to the touch. Remove from the oven and cool.
  6. For the frosting, beat the butter until smooth, then start to sift in the icing sugar, stirring regularly. Add the vanilla extract and milk. The frosting should be light and creamy.
  7. Mix your chosen food colouring into the icing.
  8. Once the cupcakes are cool, pipe the icing into the cupcakes and finish with your chosen decorations. Then allow to set for at least 30 minutes.

These cupcakes were nice!!! I used a new piping bag for the first time ever and I've always thought they were fairly easy to use. But as soon as I used it, it was really hard stay still and gently while placing the icing evenly. Out of all 12 cupcakes, I think it's safe to say that only a few of them turned out to be perfectly decorated! Practice makes perfect!
